Man, have I been cooking!

Breadless Meatloaf with Quinoa and Ground Turkey

1 or 2 lbs ground turkey, depending on the size of the crowd
(You may also mix in up to 1 to 2 lbs leanish ground beef like I did... The husband had no idea I even used ground turkey! If adding the ground beef be sure to double all ingredients)
1/4 cup cooked quinoa (it adds to the flavor of this recipe if it was cooked it broth, although this is not essential)
1/2 of one medium onion
1 egg
1 tbsp worchestershire sauce
1 tbsp ketchup
1 clove of minced garlic (or several spoonfuls of the jarred, pre-minced variety... That's all I ever buy)
Salt and pepper to taste

(You can also add an envelope of onion soup mix or meatloaf seasoning... Both add lots of flavor, but the recipe is still very tasty without.)

Preheat oven to 350 degrees. Cover a baking sheet with foil. Add all ingredients into a large mixing bowl and dig in! Mix very thoroughly with hands until all ingredients are incorporated. Shape mixture into one or two loaves on the baking sheet. If desired, brush loaves with ketchup, tomato paste or a mixture of equal parts worchestershire sauce and brown sugar (I used medium agave nectar because I'm weird like that). Bake uncovered for 50 minutes (longer if you have doubled the recipe. I cooked 3 lbs of meat altogether and it needed to bake an additional 25 minutes.) Serve with either mashed potatoes or baked sweet potatoes and enjoy! Makes EXCELLENT sandwiches next day. It is also excellent meat for many other recipes including spaghetti, stuffed bell peppers, goulash, shepherd's pie, you name it! I'm using it for my lentil stuffed bell peppers tonight, and provided it turns out like it should the recipe will be available for your viewing pleasure soon.
